High-protein, high-fibre, & count towards your child's vegetable intake for the day?!

These brownies are SO GOOD, guys! Honestly your child will never know that they're made from black beans! (And if they do, they will not care.)

Black beans are high in protein, fibre, contain iron AND legumes count towards our vegetable intake for the day, so these black bean brownies make SUCH a great sweet treat 😊

Here's what you'll need to make them:
  • 1 tin black beans, rinsed & drained
  • ½ cup rolled oats, blitzed to a flour
  • 1 egg 
  • 1/2 cup avocado oil, melted (or butter)
  • 1 teaspoon vanilla
  • 1/2 cup coconut sugar or honey
  • 1/3 cup cacao powder
  • 1 teaspoon baking powder pinch of salt
  • 1 cup dark chocolate chips
 
  1. Preheat oven to 180deg C & line a small baking tin with baking paper
  2. Blitz oats in a food processor until they resemble a flour
  3. Add in the remaining ingredients, except for the chocolate chips & mix to combine well
  4. Stir through most of the chocolate chips, reserving some to sprinkle on the top
  5. Pour the mix into the baking tray, and top with the remaining choc chips
  6. Bake for around 15 minutes, until cooked mostly through, then leave to cool in the tin before cutting (should remain fudgy in the middle)
